Broccoli Rice and Cheese Casserole

  • 6 ounces chopped broccoli fresh or frozen
  • 3 tablespoons butter
  • 1/2 cup chopped onion
  • 1 cup Velveeta cheese (diced) about 4 ounces
  • 10.75 ounces (1 can) cream of chicken soup
  • 2 cups cooked white rice


  1. Steam broccoli for 5 to 7 minutes, until it turns bright green.
  2. In a medium saucepan, melt the butter. Add the chopped onion and sauté until the onion becomes translucent.
  3. Add the cheese, cream of chicken soup, broccoli, and rice and stir until the cheese is melted and the mixture is heated through.
  4. Place mixture in an 8-inch baking pan, bake in oven at 350°F oven for about 20 minutes, until hot and bubbly.  If desired, shredded cheddar can be added to the top before baking.
