If baking, preheat oven to 400 degrees F. Line a baking sheet with foil and place a wire rack on top of the foil, spray with oil. Set aside.
Cut jalapenos in half lengthwise and take the seeds and stems out.
Spread approximately one teaspoon of cream cheese into each jalapeno half. Sprinkle shredded cheese on top.
Cut chicken tenders (thawed) into 2 smaller pieces and lightly season each piece . Place chicken piece on top of each pepper. (depending on size of tender, chicken may be slightly pounded thin or cut into smaller pieces)
Take a strip of bacon that’s been cut in half (to make 2 pieces) and wrap bacon piece around the pepper and chicken, securing with a toothpick.
Bake on a wire rack in the oven at 400°F for 20-25 minutes or until chicken is cooked through. If grilling, grill on indirect heat until poppers are cooked through, anywhere from 15 to 30 minutes depending on grill. The internal temperature of the chicken should be 165˚ F.

12 Chicken Tenders
12 Jalapeno Peppers (fresh)
1-2 tsp. Cajun/Creole seasoning
8 oz. Cream Cheese
1/2 cup shredded cheddar or Mexican blend cheese
12 Bacon strips, each strip cut in half
