Green Chile Brown Rice by Adolphus

Serves 6


  • 1 cup Adolphus® White Rice or Adolphus® Whole Grain Brown Rice
  • 1 chicken bouillon cube
  • 1 tsp vegetable oil
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 1 jalapeño pepper, seeded and chopped
  • 1 tsp dried oregano leaves
  • 1/2 tsp ground cumin powder
  • juice of 1 lime
  • 2 green onions, sliced
  • ¼ cup fresh cilantro leaves, chopped
  • light sour cream (optional)
  • low fat Cheddar cheese, shredded (optional)


  1. Prepare rice according to package directions, adding the bouillon cube to water.
  2. Heat oil in a large skillet over medium heat. Add bell pepper, onion, garlic, jalapeño, oregano, and cumin. Sauté 5 minutes or until vegetables are tender.
  3. Stir in cooked rice, lime juice, green onions and cilantro. If desired, top with optional ingredients.

Recipe Tips:  To save time, you can substitute 2 cans of chopped green chilies for the bell pepper, onion, and garlic.

Rice Cooker Directions: To prepare the rice for this dish … Add brown or white rice, water and bouillon cube to the inner pot of your Rice Cooker. Press the Cook Switch; or set to Brown or White Rice. When the rice cooker beeps, proceed with remainder of recipe as directed above.
