Grilled Chicken Salad Sandwich

  • 2 cups grilled or cooked chicken chopped (2 or 3 chicken breast)
  • ½ – 1 cup mayonnaise
  • 1 stalk celery chopped
  • 1 green onion diced
  • 1 teaspoon dijon mustard
  • ½ teaspoon seasoned salt
  • pepper to taste
  • 1 or 2 sliced avocados
  1. Grill or cook chicken breasts
  2. Chop chicken, celery and green onion
  3. Combine all the ingredients in a small bowl and mix well.
  4. Season with salt and pepper to taste.
  5. Grill or toast buns (brioche is especially good)
  6. Top with sliced avocado if desired

Makes 4 sandwiches
