Ensalada De Nopal

Ingredients
  • 6 nopales (cactus plants) cut into small cubes
  • 4 tablespoons of vinegar
  • 1 bay leaf
  • 2 tomatoes cut into small cubes
  • 1 onion cut into small cubes
  • ½ cup chopped coriander
  • 2 lemons
  • La Vaquita® Queso Fresco
  • Salt, pepper to taste
  • 4 tablespoons of olive oil
Directions
  1. Boil the chopped cactus in water with vinegar and bay leaf for five minutes and drain
  2. Mix with onion, coriander, tomato, lemon and La Vaquita® Queso Fresco
  3. Add olive oil, salt and pepper to taste and serve
