Mexican Chicken Tostadas

8 to 10 Tostadas


  • 1 lb. chicken breast, seasoned, cooked and shredded
  • 2 cups refried beans
  • ½ head iceberg lettuce shredded
  • 1 medium white onion very thinly sliced
  • 1-2 Avocados, sliced
  • ½ cup Mexican crema or sour cream
  • 4 oz. queso ranchero, a Mexican cheese
  • 1 to 1 1/2 cups of your favorite salsa
  • 8 to 10 tostadas


  1. Start by gathering all your ingredients.
  2. Heat the refried beans.
  3. Spread about 1 tablespoon of beans on each tostada.
  4. Add shredded chicken.
  5. Add shredded lettuce, sliced onion and 1-2 slices of avocado
  6. Add 1 tsp. of crema and ½ oz. cheese.
  7. Top with salsa to taste

Note:  If desired, arrange as a Tostada Bar so everyone can make their own.  The order of ingredients can be changed and different toppings can be substituted.
