Cream Cheese Cake Mix Cookies

Prep: 10 min, Bake: 9-11 min per batch

Makes approx. 24 cookies

Ingredients

  • 1 15.25 oz. box white cake mix
  • 1 8 oz. brick cream cheese, softened
  • 1/2 cup butter (1 stick) softened
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar for sprinkling

Instructions

  1. Preheat oven to 350°. Combine the cream cheese and butter with mixer, or by hand,  until you have a cream consistency. Add the egg and vanilla extract. Mix until incorporated. Add the cake mix and mix until it is well combined. The mixture will be rather thick.
  2. Scoop heaping tablespoons of dough, using a scoop or 1 1/2 tablespoon, onto a parchment or silicone-lined baking sheet.
  3. Bake for 9-11 minutes or until the edges are set, cookies will appear to be a little undercooked but that is how they will look.
  4. Remove cookies from the oven and let them cool completely on the cookie sheet. Once cooled sprinkle tops with powdered sugar. (be sure to sprinkle powdered sugar on when cookies are completely cooled or the sugar will melt) Store cookies in an air tight container at room temperature for 4-5 days.
