Creamy Southwest Salsa Chicken

Prep: 5 min, Cook:  12-15 min
Serves 4


  • 1 pound boneless thighs or chicken breasts, cut into strips
  • 1 tbls taco seasoning
  • 2 tsp olive oil
  • 1/2 cup corn
  • 1 cup salsa
  • 1/2 cup sour cream
  • Optional:  Cilantro


  1. Heat a large skillet over high heat and coat with olive oil.
  2. Season chicken with taco seasoning evenly on all sides.  Brown on both sides for 3-5 minutes.  It does not need to be fully cooked at this point
  3. Mix in corn kernels and salsa. Reduce heat to medium and simmer for 3-5 minutes or until the chicken is cooked through, (time depends on white or dark meat) 165 degrees F.
  4. Remove from heat and stir in sour cream.
  5. Garnish with cilantro if desired and serve immediately with rice.
