Loaded Baked/BBQ Potatoes with Pulled Pork

Ingredients

  • 4 Large Russet Potatoes
  • 12-16 oz Bacon
  • 8 oz Sour Cream
  • 2 cups Shredded Cheddar Cheese
  • 2 cups Shredded Monterey Jack Cheese
  • 1 stick Butter
  • 1 bunch Green Onions thinly sliced
  • 2 lbs Pulled Pork
  • 2 Tablespoons of your favorite BBQ Rub
  • 2 teaspoons Creole or All-Purpose Seasoning
  • 1/4 cup BBQ Sauce

Directions

  1. Cook bacon until crispy and chop into pieces. Reserve bacon grease.
  2. Prepare grill for indirect cooking at 350°F.*
  3. Wash potatoes and pat dry with paper towel.
  4. Drizzle potatoes with bacon grease (or oil) and season with rub.
  5. Place potatoes on grill and cook until tender.
  6. Slice the tops off each potato and scoop out the insides into a large bowl. Add butter, sour cream, half the cheese, seasoning, bacon, and green onion (reserve a little bacon and green onion for garnish).
  7. Stir to combine and spoon the mixture back into each hollowed-out potato.
  8. Top with a heaping pile of pulled pork and drizzle with BBQ Sauce.
  9. Add the remaining cheese to the top of each potato and return to the pit for 10 minutes or until the cheese melts.
  10. Garnish with remaining green onion and crumbled bacon and serve.

*Oven Method:  Bake Potatoes at 400°F for 1 hr.  Return to oven for 10 minutes for final step (or until cheese melts)
