Food Town Mac Juicy Lucy

  1. Pour the mac and cheese into a sauce pot and add the shredded cheese. Cook on medium heat for about 5 minutes while stirring until the pasta is hot and the cheese is melted in.
  2. Lay parchment paper on a baking sheet and spread the pasta onto the paper to about a 1 inch thickness. Place another sheet of parchment on top and refrigerate for at least 2 hours, or overnight.
  3. Put the sliced onion and butter into a frying pan and cook on low stirring often for about 30 minutes until deeply caramelized.

  5. Split the sausage into 4 equal pieces. One by one, flatten the sausage with your palm and place a mac and cheese round into the sausage. Form the meat around the mac and cheese, making sure to seal it evenly on all sides. Repeat until you have done all 4 burgers. Cook the burgers in a frying pan or on a grill for about 6 minutes per side, covering the burgers to make sure the mac and cheese gets nice and hot in the middle of the burger. Watch closely because if any mac and cheese bursts out from the center of the burger it is probably ready to come off the grill.
  6. Grill the buns for a minute at the end of the cooking time just to slightly toast.
  7. Build the burgers first spreading mayo on the bottom bun, then place the patty onto the bottom bun, and top with the onions, followed by the pickles. Place top bun on top. Serve.
