3 large potatoes (Russets or Gold, peeled and cubed)
½ teaspoon salt (or to taste)
¼ teaspoon pepper (or to taste)
1 small onion (chopped)
1 pound Pork Roll Sausage
1 bell pepper, chopped (red, green, orange, or yellow)
3 cloves garlic (minced)
¼ teaspoon red pepper flakes
Directions
Add the olive oil to a large skillet and heat over medium heat. Add the cubed potatoes, season with salt and pepper and cook for 7 to 10 minutes, until they’re about halfway cooked through, stirring occasionally.
Add the onion and cook for another 3 minutes, stirring occasionally.
Add the sausage, (break up sausage) bell pepper, garlic and red pepper flakes to the skillet and stir. Reduce the heat, and continue cooking until potatoes and sausage are cooked through, another 10-13 minutes. To cook faster, cover skillet.
Taste for seasoning and adjust with salt and pepper if needed. Serve with fried eggs and sprinkle your favorite cheese or herbs on top if desired. Can also be served with tortillas and salsa.

Sausage Potato Breakfast Hash
