Easy Sausage Queso Flameado

Prep: 12-15 min, Cook: approx 15 min

Serves 4-6

Ingredients

  • 1 12-13 oz Package Smoked Sausage
  • 2 Tbs of olive oil
  • 2 Roma tomatoes
  • ½ Onion
  • 2 Jalapeños
  • 3-5 Cloves of garlic
  • Fajita seasoning to taste
  • 1 ½ Cups of mozzarella cheese
  • ¼ Cup of cilantro
  • Corn tortillas

Directions

1.)  Prep your ingredients: Cut the tops off the jalapeños, cut them in half and remove the seeds before slicing them julienne style.  Cut the onion in half and slice half julienne style.  Next, cut the tomatoes in quarters and mince the garlic.  Slice the sausage in bite-sized pieces.

2.) Heat a skillet over medium heat and add the olive oil and garlic. Cook garlic for 1-2 minutes until slightly soft.

3.) Add in the jalapeños, onions, and sprinkle fajita seasoning, let cook for 2-3 minutes.

4.) Add the sausage and tomatoes to the skillet. Cook for an additional 3-5 minutes

5.) Sprinkle the cheese over top, lower the heat and cover until cheese is melted.

6.) Heat the corn tortillas.

7.) Once the cheese melts, top with chopped cilantro.

8.) Fill the warm tortillas with the sausage queso flameado and enjoy!*

*For extra flavor, add a homemade salsa to the skillet.

Roasted Salsa Recipe

  • 2 Jalapeños
  • 3 Roma tomatoes
  • ¼ Onion
  • 3 Garlic cloves
  • 1 cup Cilantro
  • 1 tsp salt

1.)   Roast jalapeños, tomatoes, onion & garlic on the grill for 2-3 minutes.

2.)   Add roasted ingredients in a blender, along with 1 tsp of salt, a cup of cilantro, and 1/3 cup of water and blend until desired consistency.

3.)   Pour the salsa in a serving bowl

*Note:  For a milder salsa, remove seeds from jalapeños after roasting.
