1 large onion, peeled and sliced into thick wedges
4 medium white potatoes cut into 1-inch chunks
2 Tablespoons olive oil
2 tsp. Italian seasoning
½ tsp garlic powder
Salt & Pepper to taste
Preheat the oven to 400°F.
Line a large baking sheet with tin foil, and spray with cooking spray. Set aside.
Add the cut sausage, potatoes, and onions to a large bowl. Add olive oil and seasonings and mix until combined. Spread onto baking sheet.
Place into the heated oven and roast for 40-45 minutes, stirring every 15 minutes or so, until the potatoes are golden brown and tender. (check after 30 min for doneness since all ovens, veggies, etc. vary.)
