Skillet Turkey Taco Rice

Ingredients

  • 2 tablespoons Olive Oil
  • ½ large Onion diced (about 1 cup)
  • 2 cloves Garlic minced
  • 1 pound Uncooked Ground Turkey or ground beef
  • 3/4 cup Uncooked Long Grain White Rice
  • 1 (14.5-ounce can) Diced Tomatoes (don’t drain)
  • 2 cups Chicken Broth
  • 1 14-15.25 oz can whole kernel corn (drained)
  • 1 15.5 oz can pinto or black beans (drained, rinsed)
  • 4 tablespoons Taco Seasoning or 2 (1-ounce) packets
  • 1½ cups shredded cheese

Optional Toppings: cilantro, sour cream, jalapeno slices, sliced avocado

Directions

  1. Heat olive oil over medium-high heat, then add onions and garlic, saute a few minutes until tender, stirring as needed.
  2. Add ground turkey and break apart while stirring. Saute & stir until cooked through (drain if needed)
  3. Add uncooked rice, diced tomatoes (with juice), chicken broth, taco seasoning, beans, and corn. Stir to combine.
  4. Bring everything to a boil. Maintain boil for 5 minutes, stirring as needed.
  5. Cover and reduce heat to med-low to simmer for 20 minutes, or until rice is cooked through. You may need to cook off excess liquid, if any, as needed.
  6. After simmering, stir, taste for salt & pepper, and top with the shredded cheese. Cover with lid and let the cheese melt for a few minutes.
  7. Serve with diced cilantro, sour cream or your favorite taco toppings
