Skillet Turkey Taco Rice

Ingredients
2 tablespoons Olive Oil
½ large Onion diced (about 1 cup)
2 cloves Garlic minced
1 pound Uncooked Ground Turkey or ground beef
3/4 cup Uncooked Long Grain White Rice
1 (14.5-ounce can) Diced Tomatoes (don’t drain)
2 cups Chicken Broth
1 14-15.25 oz can whole kernel corn (drained)
1 15.5 oz can pinto or black beans (drained, rinsed)
4 tablespoons Taco Seasoning or 2 (1-ounce) packets
1½ cups shredded cheese
Optional Toppings: cilantro, sour cream, jalapeno slices, sliced avocado
Directions
Heat olive oil over medium-high heat, then add onions and garlic, saute a few minutes until tender, stirring as needed.
Add ground turkey and break apart while stirring. Saute & stir until cooked through (drain if needed)
Add uncooked rice, diced tomatoes (with juice), chicken broth, taco seasoning, beans, and corn. Stir to combine.
Bring everything to a boil. Maintain boil for 5 minutes, stirring as needed.
Cover and reduce heat to med-low to simmer for 20 minutes, or until rice is cooked through. You may need to cook off excess liquid, if any, as needed.
After simmering, stir, taste for salt & pepper, and top with the shredded cheese. Cover with lid and let the cheese melt for a few minutes.
Serve with diced cilantro, sour cream or your favorite taco toppings
