Whisk together the vinegar, soy sauce, sesame oil, honey, and chili oil or flakes in a large mixing bowl.
Quarter cucumbers lengthwise and cut into 3-inch pieces, or slice into 1/4-1/2 inch pieces. Add the cucumber pieces and sesame seeds (if using) to the liquid dressing and mix until evenly coated.
Refrigerate for at least 20 minutes or until cold.
Stir again and add more chili oil if you like it spicy and serve cold.

2 tablespoons rice wine vinegar
1 tablespoon soy sauce
1 tablespoon toasted sesame oil
1 tablespoon honey
2 teaspoons chili oil or 1/2 tsp chili flakes
2 large cucumbers
Optional: 1 teaspoon sesame seeds
