Ingredients
4 boneless, skinless chicken breasts
2 ripe mangoes, peeled and diced
¼ cup olive oil
2 tablespoons soy sauce
2 tablespoons fresh lime juice
2 tablespoons honey
2 cloves garlic, minced
1 tablespoon grated fresh ginger
Salt and pepper to taste Optional: Fresh Cilantro for Garnish
Directions
For the Mango Marinade: In a blender or food processor, combine the diced mango, olive oil, soy sauce, lime juice, honey, minced garlic, grated ginger, salt and pepper. Blend until smooth.
Marinate: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour half of the mango marinade over the chicken, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight. Reserve the remaining marinade for basting and serving.
Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly distributed and hot.
Remove the chicken from the marinade, letting the excess drip off. Discard the used marinade. Place the chicken on the grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
During the last few minutes of grilling, baste the chicken with some of the reserved mango marinade using a brush. This will enhance the flavor and keep the chicken moist. Serve with your favorite veggies, rice, diced mango or avocado.
