Luscious Lemon & Berry Waffles

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 1/2 cup Parkay® Original-stick, melted (1 stick = 1/2 cup)
  • 1/2 cup sour cream
  • 1/2 cup reduced fat (2%) milk
  • 1 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
  • 2 cups fresh fruit, such as blueberries, raspberries or sliced strawberries, optional
  • Maple-flavored syrup and Reddi-wip® Original Dairy Whipped Topping, optional
  1. Preheat and prepare waffle iron according to manufacturer’s directions. Combine flour, sugar, baking powder and salt in large bowl. Make a well in center; set aside.
  2. Beat eggs, Parkay, sour cream, milk, lemon peel and lemon juice in medium bowl with wire whisk until well blended. Add to well in center of flour mixture; beat with wire whisk just until blended. (Do not overbeat.)
  3. Pour about 1/2 cup batter onto center of waffle iron; close lid. Cook until golden brown. Repeat with remaining batter to make 8 waffles. Top with fruit and/or syrup and Reddi-wip, if desired.
