Pioneer™ Butterscotch Oat Scones

  • 2 cups Pioneer Original or Buttermilk Baking Mix
  • 1 cup quick oats
  • 1/3 cup brown sugar, packed
  • ¼ tsp. salt
  • ½ cup butter or margarine, chilled, cut into pieces
  • 2/3 cup milk
  • 1 tsp.vanilla extract
  • ½ cup butterscotch baking chips
  1. Preheat oven to 375°F.
  2. Blend together Pioneer Baking Mix, oats, brown sugar and salt. Add butter and mix until the mixture looks like fine granules.
  3. Add vanilla to milk, pour over dry mixture, and stir until a soft dough forms, about 1 minute. Stir in butterscotch chips.
  4. Drop by 1/4 cupful onto a nonstick baking sheet. Bake 16-19 minutes until medium brown on top. Cool on wire rack.
