Scrambled Eggs with Queso Fresco

  • 2 eggs
  • 1 – 2 teaspoons butter
  • 1/4 cup crumbled queso fresco
  • Salt, to taste


  1. Whisk the eggs in a bowl. Heat the butter in a pan. Add the eggs. Stir as the eggs cook slowly. When the eggs begin to get firm, stir in the cheese and cook another 10 to 20 seconds.
  2. The cheese will add some salt to the eggs, so taste before adding more salt.
  3. If desired, garnish with green onion or parsley and serve.
