Baked Salsa Chicken Breasts

Serves 4

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 1/2 tablespoons taco seasoning
  • 1 1/2 cups salsa
  • 1 cup shredded Cheddar, Monterey jack, or Mexican Blend cheese
  • 1/4 cup sour cream
  • cooking spray
  • Optional: garnish with 2 tbls. Cilantro or sliced green onions

Directions

  1. Preheat the oven to 375 degrees F. Coat a 2 quart baking dish with cooking spray.
  2. Spread 1/2 cup of salsa in an even layer at the bottom of the dish. Sprinkle the taco seasoning evenly over the chicken. Place the chicken breasts on top of salsa in dish.
  3. Pour the remaining salsa over the chicken. Bake for 30 minutes, or until chicken is cooked through, to 165 degrees.
  4. Remove the dish from the oven. Sprinkle the cheese over the chicken.
  5. Return the pan to the oven and bake for an additional 2-3 minutes or until cheese is melted.
  6. Top each chicken breast with a dollop of sour cream and cilantro or green onions.
