Food Town BBQ Chicken Nachos

  1. Preheat oven to 400° and line a large baking sheet with foil. In a large bowl, toss cooked chicken with barbecue sauce.
  2. Layer half the chips, cheddar, Cotija, chicken, jalapeños, and onion. Repeat the layers.
  3. Bake until cheese is melty and nachos warmed through, 15 minutes.
  4. Top with avocado and cilantro before serving. If desired, add a squeeze of lime.

  • 7 oz. crumbled Cotija or grated Queso Cotija
  • 1 cup pickled jalapeños, or 1/2 cup fresh jalapeños thinly sliced
  • 1/2 small red onion, thinly sliced
  • 1 avocado, thinly sliced
  • Freshly chopped cilantro, for garnish
