Preheat the oven to 375 F. Prepare a 9×13 inch baking dish sprayed with cooking spray.
Mix the brown sugar and Cajun seasoning in a bowl to make a rub, then place the bacon strips in to toss well. You can add more Cajun seasoning if desired. Set aside.
Split the side of the chicken breast to create a pocket. Stuff the pocket with boudin and sprinkle the Cajun rub mixture over the chicken. Repeat with the other chicken breasts.
Wrap 2 bacon strips around each chicken breast. Place the wrapped chicken breasts onto the prepared baking dish and bake for 40 – 50 minutes, or until the internal temperature of the meat reaches 165F. While baking, baste the chicken with the juices, then remove the remaining juice so that the bottom of the bacon will crisp.
At the last 5 minutes of baking, sprinkle the meat with more of the rub to create a nice color.
Remove the chicken from the oven and let rest 10 – 15 minutes with loosely covered foil before slicing and serving.

Boudin Stuffed Chicken Breast

4 chicken breasts
2 links of boudin (casing removed)
8 strips of bacon
2 tablespoons brown sugar
1 ½ tablespoon Cajun seasoning
