Preheat the Oven: Preheat your oven to 350°F (175°C).
Mix Ingredients: In a mixing bowl, combine the peanut butter, sugar, and flour. If using, add the egg & vanilla. Mix until well combined.
Scoop tablespoon-sized amounts of the dough and roll them into balls. Place them on a baking sheet lined with parchment paper, leaving some space between each cookie.
Use a fork to gently press down on each cookie, creating a crisscross pattern on top.
Bake for about 10-12 minutes, or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
