Grilled Fish with Pineapple Salsa

INGREDIENTS

PINEAPPLE SALSA:

  • 1 cup minced fresh pineapple
  • 1/2 large onion, minced
  • 1/2 large yellow bell pepper, seeded and minced
  • 1/2 large green bell pepper, seeded and minced
  • 1/4 cup minced fresh cilantro

FISH:

  • 3 medium limes, juiced
  • 1 tablespoon vegetable or canola oil
  • 4 firm-type fish filets, (use a white fish that flakes apart easily when grilled)
  • salt and pepper

INSTRUCTIONS

PREPARE THE SALSA:

In a bowl, combine the pineapple, onion, bell pepper and cilantro. Cover and chill.

PREP THE FISH:

  1. In a small bowl, combine the lime juice and the oil. Set aside. Salt and pepper the fish.
  2. Heat and oil your grill. Grill the snapper for approximately 4 to 8 minutes on each side, basting with the lime juice mixture. The fish is done when it flakes easily when tested with a fork and is no longer translucent in the center.

Serve with rice and your favorite vegetable
