4 firm-type fish filets, (use a white fish that flakes apart easily when grilled)
salt and pepper
INSTRUCTIONS
PREPARE THE SALSA:
In a bowl, combine the pineapple, onion, bell pepper and cilantro. Cover and chill.
PREP THE FISH:
In a small bowl, combine the lime juice and the oil. Set aside. Salt and pepper the fish.
Heat and oil your grill. Grill the snapper for approximately 4 to 8 minutes on each side, basting with the lime juice mixture. The fish is done when it flakes easily when tested with a fork and is no longer translucent in the center.
Serve with rice and your favorite vegetable
