Ground Turkey & Avocado Taquitos

Time: 35 MINUTES  yield: 8 TAQUITOS

Ingredients:

Avocado Mixture

  • 2 medium avocados or 1 large
  • Juice of half a lime
  • 1 tbsp cilantro, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste

Taquitos

  • 1 tbsp canola oil
  • 1/2 white or yellow onion, diced
  • 2 cloves garlic, minced
  • 3/4 lb ground turkey
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tsp Chili Powder
  • ¼ teaspoon cayenne pepper
  • 8 tortillas (flour or corn, your preference)
  • Oil spray
  • 1/4 red onion, diced (optional topping)
  • 1 tbsp cilantro, chopped (optional topping topping)

Instructions:

  1. Preheat the oven to 400 F and line a baking sheet with parchment paper.
  2. Mash the avocado and combine it with the lime juice, and seasonings. Set aside.
  3. Prepare your pan by heating oil over medium heat. Add the onion and garlic and saute for 3-4 minutes or until the onion is slightly translucent.
  4. Add the ground turkey to the pan, and season with Salt, Pepper, Chili Powder, and Cayenne. Crumble the turkey until fully cooked. Set aside.
  5. Heat the tortillas for about 5-10 seconds to make them more pliable. If using fresh tortillas, warm for a longer amount of time. Spoon 1 large spoonful of the avocado mixture, and about 2 spoonfuls of the turkey mixture. Roll into a tight taquito and transfer to the baking sheet. Repeat with all of the tortillas. Spray with oil spray.
  6. Bake the taquitos in the preheated oven for 15 minutes or until crisp (*see notes for air fryer instructions)
  7. Remove from the oven and serve with your favorite toppings; mexican cheese, queso, sour cream, and a side of salsa.

*Air fryer directions – cook at 370 for 6-8 minutes or until crisp.
