Healthy Coconut Curry Soup with Bananas

Makes 4 bowls
Ingredients
1 tablespoon vegetable oil / coconut oil
2 tablespoons Thai curry paste
2 small red chilis, thinly sliced
2 vegetable stock cubes
2 cans of light coconut milk
1 1/2 cups water
2 green bananas
2 tablespoons of unsalted peanuts
Handful of fresh Cilantro
Directions
Add the vegetable oil to a large saucepan and add the Thai curry paste. Cook for 2-3 minutes, stirring continually until warmed.
Add the coconut milk, water and stock cubes, stir thoroughly and bring to a boil.
Peel and cut the bananas into slices. Fry briefly in non-stick pan on high heat and flip over so that they are golden on both sides
Put the soup in bowls and add the banana slices. Garnish with cilantro, peanuts and the sliced peppers.
