Season both sides of chops with salt and black pepper. Add a tablespoon of olive oil to the pan and heat. Add meat, leaving space between the pieces to ensure they cook and brown. Cook for 3-5 minutes per side.
Transfer meat to a plate, add the remaining oil to the pan then add apples and onions. Cook for 4 minutes, stirring occasionally. Season with salt, pepper, sage, rosemary and thyme.
In a small bowl, mix the chicken broth and mustard, add broth mixture to the skillet, using a wooden spoon to gently scrape the bottom of the skillet.
Add meat back to the pan between the apples. Cook for 2-3 minutes until the meat is finished cooking and the liquid has reduced by half. Serve these chops with the sauce and accompany with white rice.

Pork Chops with Stewed Apples

Ingredients
2 Tbsp Olive oil
4-5 Pork Chops
Salt and black pepper to taste
3/4 cup Chicken broth
2 tsp. Dijon or whole grain mustard
2 Tbsp. Sage
1 1/2 tsp chopped fresh rosemary
1 tbsp chopped fresh thyme
1/2 tsp.salt
1/4 tsp. slack pepper
2 Medium apples cut into thin slices
1 Small red onion cut into thin slices
