Slow Cooker BBQ Pulled Pork

Serves 6-8
Ingredients
4-6 pounds bone-in pork butt or shoulder roast
1 small onion, diced
¼ cup store bought pork rub, or make your own*
1 12 oz. can Dr Pepper (cola will work too)
1 Tablespoon hickory liquid smoke
1 bottle your favorite BBQ sauce
Directions
Rinse the pork shoulder and pat dry. Rub pork rub all over pork shoulder.
Place in a 6-8 quart oval slow cooker, fat side up (use the proper size slow cooker depending on the size of your pork shoulder). Add diced onion.
Pour in 12 ounces of Dr Pepper and the liquid smoke all around the sides of the pork.
Cover and cook on low setting for 8 to 10 hours, until the pork is very tender.
Remove the pork from the slow cooker and discard the remaining liquid, keep some liquid for mixing with pork or for reheating.
Remove the bone and shred the pork using a couple of forks, removing any excess fat.
Serve the shredded meat on a hamburger bun with BBQ sauce and your favorite toppings.
*Pork Rub Recipe (use less than traditional rub)
2 teaspoons Creole Seasoning
1 teaspoon mustard powder
2 teaspoons brown sugar
1/2 teaspoon paprika
