Food Town Slow Cooker Chicken & Dumplings

Total Time:  Approx. 8 hrs in slow cooker

Serves 6-8

Directions

  1. Place the chicken, potatoes, carrots and celery into a 6-quart slow cooker.
  2. Stir the soup, water, thyme, garlic powder and black pepper in a small bowl. Pour the soup mixture over the chicken and vegetables
  3. Cover and cook on Low for 7 to 8 hours or on High for 4 to 5 hours until chicken is cooked through.
  4. Make the dumplings*. In a mixing bowl, whisk together the flour, baking powder, salt, thyme and pepper. In another bowl, combine the milk & melted butter. Add this mixture to the dry ingredients, stirring until just combined.
  5. Drop spoonfuls of dumpling batter over the chicken mixture. Turn the heat to HIGH. Tilt the lid to vent and cook for 30 minutes or until the dumplings are cooked in the center. Taste for additional seasoning. If desired, garnish with parsley or a sprig of thyme

(A biscuit baking mix can also be used instead of making dumplings from scratch, follow box directions)

  • 1 large Russet potato or 2 medium Yukon Gold potatoes, peeled, cut into 1-inch pieces
  • 2 cups sliced carrots
  • 2 stalks celery, sliced
  • 1 small onion, diced
  • 2 (10.75 ounce) cans Campbell’s® Condensed Cream of Chicken Soup
  • 1 can (14.5 oz) chicken broth
  • 1 tsp garlic powder
  • 1 teaspoon dried thyme leaves, crushed (or 1 sprig fresh)
  • ½ teaspoon ground black pepper

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)
  • 3/4 cup milk
  • 4 Tablespoons melted butter
