Gather your other ingredients. Portion the beef into four 3.5 ounce balls
Heat a griddle over high heat. When hot, season the beef with salt and pepper and place on the griddle.
Quickly place a flour tortilla on top of the beef and smash it down using a burger press or a spatula. Press down to make sure it’s extremely thin. Let the meat cook for about 3 minutes or until the color of the beef has darkened and it’s crisp on the bottom.
Carefully scrape up the tacos using a sturdy spatula and flip the tacos. Reduce the heat to low, add the cheese to the top of the burger patty and cover to allow the cheese to melt, about 1 more minute.
Remove from the grill and top with lettuce, pickles, if desired, and a drizzle of the sauce.
