1 15 oz. can black beans (can replace black beans with another can of black-eyed peas if desired)
1 10 oz. can Hatch diced tomatoes & green chilies, mild (or Rotel)
2 15.25 oz. cans whole kernel corn
1 15 oz. bottle zesty Italian dressing
Optional: 1 small avocado, chopped or half of fresh jalapeno, seeds removed
Directions
Drain all the cans well and pour the contents into a large bowl. Add the chopped cilantro or parsley, and green onions. Pour the entire bottle of Italian dressing and stir well.
Refrigerate 1-2 hours before serving. Stir in avocado right before serving if using. Serve with tortilla chips or corn chips.
