1 jalapeno, diced (seeds removed if you don’t like spicy)
1 ounce taco seasoning (1 packet)
½ cup water
1 tablespoon chili powder
1 14.5 – 15 ounces can diced tomatoes
1 8 oz. can tomato sauce
15 ounces Ranch Style Beans or Pinto beans drained
1 cup corn kernels
4-6 cups Fritos® Corn Chips
2 cups shredded cheddar or Mexican cheese blend divided
¼ cup sliced green onions
shredded lettuce, diced tomatoes, sliced jalapeno or sour cream for serving, optional
(“Scoops” size Fritos® can be used, we suggest gently breaking them up into smaller pieces)
Directions
Preheat oven to 350°F. Grease a 9 x13-inch casserole dish.
Brown ground beef, diced jalapeno, and onions, drain fat. Stir in taco seasoning, chili powder, and water.
Bring to a boil, reduce heat, and simmer until thickened. Stir in diced tomatoes, tomato sauce, corn, & beans. Simmer an additional 5 minutes.
Add 4 cups of corn chips to the bottom of the prepared dish. Sprinkle with 1 cup of cheese.
Spread beef mixture over top and top with remaining cheese. Bake for 18 to 20 minutes or until cheese is melted.
Top with remaining chips, green onions, and desired toppings
