1/4 cup red onion. sliced
1 cucumber sliced
Your favorite dressing
Optional: 3-4 tablespoons diced, cooked bacon for topping
Instructions
Cook shrimp: Preheat a pan or grill to medium high heat. Thaw the shrimp (if frozen). Marinate the peeled shrimp a few minutes by placing in a bowl, drizzle with olive oil and blackening season. Saute or grill shrimp until fully cooked, 3-4 minutes or until opaque.
Assemble the salad: fill three bowls with lettuce or mixed greens of choice. Top with avocado, tomatoes, red onions, cucumbers and a shrimp.
Serve with dressing of your choice, and if desired, diced cooked bacon

Blackened Shrimp Spring Salad

16 medium to large shrimp deveined
2 teaspoons blackened seasoning
6 cups lettuce or spring mix
1 avocado, sliced
