Blackened Shrimp Spring Salad

Total Time: 15-20 minutes

3 servings – Calories: 300-375


  • 1 1/2 tablespoon extra virgin olive oil
  • 16 medium to large shrimp deveined
  • 2 teaspoons blackened seasoning
  • 6 cups lettuce or spring mix
  • 1 avocado, sliced
  • 1/2 cup tomatoes, or grape tomatoes, chopped in bite-size pieces
  • 1/4 cup red onion. sliced
  • 1 cucumber sliced
  • Your favorite dressing
  • Optional: 3-4 tablespoons diced, cooked bacon for topping


  1. Cook shrimp: Preheat a pan or grill to medium high heat. Thaw the shrimp (if frozen). Marinate the peeled shrimp a few minutes by placing in a bowl, drizzle with olive oil and blackening season. Saute or grill shrimp until fully cooked, 3-4 minutes or until opaque.
  2. Assemble the salad: fill three bowls with lettuce or mixed greens of choice. Top with avocado, tomatoes, red onions, cucumbers and a shrimp.
  3. Serve with dressing of your choice, and if desired, diced cooked bacon

Optional: Feta or Blue Cheese sprinkled on top
