Spinach Salad with Apples, Bacon, and Avocado

Serves 3 as an entree

Ingredients

  • 6 bacon slices, chopped
  • 1 8-ounce bag of spinach leaves
  • 1 medium-sized red apple, halved, cored, and thinly sliced or chopped
  • 1 small ripe avocado, seeded, peeled, and chopped or sliced
  • Your Favorite dressing such as Ranch or Honey Mustard
  • Optional: 1/4 cup thinly sliced red onion, 1/4 chopped pecans, 1/4 cup Feta or Blue cheese

Directions

  1. Saute chopped bacon slices in heavy large skillet over medium-high heat until brown and crisp. Using slotted spoon, transfer chopped bacon to paper towel and drain.
  2. Combine spinach leaves, apple slices, red onion (if using), avocado and bacon in large bowl. Toss salad with enough dressing to coat. Top with pecans and sprinkle cheese if desired. Divide salad among plates and serve
