Avocado Tomato Cucumber Salad

Prep 5-10 min Serves 2-3


  • 1 cup grape or cherry tomatoes, halved
  • ½ large English cucumber, sliced and quartered
  • 1 avocado, chopped
  • ¼ cup cilantro, chopped
  • 1 + ½ tablespoons lemon juice (approx ½ lemon)
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon salt
  • ground black pepper to taste


  1. In a large mixing bowl, add tomatoes, cucumber, avocado, and cilantro.
  2. In a small mixing bowl, mix together the lemon juice, olive oil, salt and pepper until smooth and combined.
  3. Pour dressing the salad and toss gently to combine. Optional: Feta or Cojita cheese on top
