Peach Watermelon Salad with Fig dressing

  • 4 cups baby arugula or other small lettuce
  • 2 tablespoons fig preserves
  • 1 1/2 tablespoons fresh lemon juice
  • 1/2 tablespoon white balsamic vinegar
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon kosher salt
  • 2 tablespoons olive oil

optional: Feta Cheese


Gently mix together cubed watermelon, fresh peach wedges, and lettuce in a large bowl. Process in blender, fig preserves, fresh lemon juice, white balsamic vinegar, dry mustard, and kosher salt until smooth; add olive oil in a slow, in a steady stream, processing until blended. Gently toss watermelon mixture with dressing. Add Feta cheese if desired.
