1 cup of shredded cooked chicken: To cook the chicken, cover it with 1 inch of water in a pot. Bring the water to a gentle boil on the stove, then reduce the heat and let it simmer. Cook the chicken breasts or thighs for 8 to 16 minutes until fully cooked. Once done, you can shred the chicken using two forks.

5tbsps KRAFT Buffalo Mayo, divided
4 flour tortillas (8-inch)
Instructions
Heat a large heavy skillet over low heat.
Meanwhile, combine chicken, cheese, onions, and 3 Tbsp. Buffalo Mayo; spoon evenly onto half of each tortilla. Fold tortillas in half to enclose filling; spread tops of quesadillas evenly with half of the remaining Buffalo Mayo.
Add two quesadillas, mayo sides down, to a hot skillet; spread the tops of the quesadillas in the skillet with half of the remaining Buffalo Mayo. Cook 2 to 4 min. on each side or until both sides of the quesadillas are golden brown and the cheese is melted. Transfer cooked quesadillas to a cutting board; cover to keep warm.
Repeat with the remaining quesadillas and the remaining Buffalo Mayo.
Cut quesadillas into wedges to serve.
Cooking Fun Fact: The oil in the mayo helps brown the outsides of the quesadillas as they cook.
