2 pounds chicken wings, drummets and wings separated (tips discarded or save for stock)
2 teaspoons garlic powder
1 teaspoon cayenne pepper, or more to taste
salt and ground black pepper to taste
Hot Honey Sauce
1 cup honey
½ cup unsalted butter, melted
½ cup hot sauce
Directions
TO FRY:
Heat 5-6 cups oil in a large pot or Dutch oven to 350°F
Pat dry, then season wings with garlic powder, cayenne pepper and salt & pepper.
When the oil is ready, fry the wings in 2 to 3 batches until cooked through, golden-brown, and crisp, about 8 to 10 minutes.(to 165º internal temperature) Use a spider or slotted spoon to transfer wings to a wire rack or baking sheet.
Toss with hot honey sauce*
To Grill:
Preheat lightly oiled grill to Medium heat (about 375-400º)
Add the seasoned wings to the grill. Grill for about 18-25 minutes turning the wings often. Cook until internal temp is 165º
Remove from grill and toss with hot honey sauce*.
*While the wings are cooking, mix up the hot honey sauce. Add butter, honey and hot sauce to a pan. Let it simmer together for a few minutes. Taste, and add more hot sauce or cayenne pepper if you want it spicier.
