Food Town Easy Key Lime Pie

Makes 1 pie

Ingredients

Vanilla Wafer Crust

• 1 1/2 cups vanilla wafer cookies crumbs (approximately 60 cookies)
• 5 Tablespoons butter melted

Key Lime Cream Pie Filling

• 8 ounces heavy cream
• 2 Tablespoons sugar
• 14 ounces sweetened condensed milk
• 1/2 cup key lime juice (around 20-25 key limes)

Directions

Vanilla Wafer Crust

1. Crush cookies into fine crumbs then combine vanilla wafer crumbs and melted butter in a large bowl
2. Press crumbs into a 9″ round baking dish, bake at 350 degrees for 10-12 minutes.
3. Let cool completely.

Key Lime Cream Pie Filling

1. Whip heavy cream and sugar together until stiff peaks form. Set aside.
2. In a medium bowl, add lime juice with condensed milk and beat until thick. Fold in whipped cream. Pour mixture into prepared cool pie crust.
3. Refrigerate for at least an hour and until ready to serve. (if desired, top with additional whipped cream)
